D’s Pecan Pralines
2 cups brown sugar
½ cup granulated (white) sugar
2 5oz cans evaporated milk
¼ cup water
1 cup pecans cut in half pieces
3 tbsp butter
2 tsp vanilla
Put the
sugars, milk and water in a sauce pan. Heat to 235° F(soft ball). Cut the heat and remove
pan from heat. Add butter, vanilla and pecans. Stir the mixture until it starts
getting thick. You may have to stir it constantly for 10 to 15 minutes.
Immediately spoon out onto wax paper. Let Pralines cool, remove from wax paper
and serve or place in Tupperware for later or wrap individually in Saran wrap!
The secret
to pralines is in the stirring until the mixture is cool enough. If you try to
spoon the mixture out while it is too hot, it will be wet and sticky. Stir after
cooking until the mixture is getting really thick, then spoon out quickly. If
you can master the cooling technique, you can master the Praline and amaze your
family and friends!
